Rustic Apple Galette (Easy French Apple Tart)

This rustic apple galette is a simple yet stunning dessert. A buttery, flaky crust wraps around tender spiced apples, baked until golden brown and caramelized. It’s easier than pie but just as delicious—perfect for holidays, gatherings, or a cozy weekend treat.

Ingredients
  

Dough
  • 160 g all-purpose flour
  • 1 tbsp sugar
  • 100 g unsalted butter cold, cubed
  • Pinch of salt
  • 1 tbsp vanilla
  • 1 egg
Filling
  • 4 large apples peeled and sliced
  • cup brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp flour
  • 3 tbsp water
  • 2 tbsp butter
For Brushing
  • 1 egg yolk
  • Brown sugar for sprinkling

Equipment

  • Mixing bowls
  • Rolling pin
  • Skillet or saucepan (for apples)
  • Baking sheet with parchment paper
  • Pastry brush

Method
 

  1. Prepare the dough: Mix all dough ingredients until a smooth dough forms. If it’s too sticky, add a little more flour. Wrap in plastic wrap and refrigerate while you make the filling.
  2. Cook the filling: Melt butter in a pan. In a bowl, mix apples with flour, brown sugar, cinnamon, and water. Add apple mixture to the pan and cook for 5–6 minutes, stirring every 2 minutes. Remove the lid and let cool.
  3. Assemble the galette: Preheat oven to 350°F (180°C). Roll out dough into a circle. Place apples in the center, leaving edges uncovered. Fold the edges of the dough over the apples.
  4. Finish: Brush edges with egg yolk and sprinkle with brown sugar.
  5. Bake: Bake for ~40 minutes, until crust is golden brown. Optionally brush apples with any leftover pan juices.
  6. Serve: Let cool slightly before slicing.

Notes

For extra shine, brush the apples with warmed apricot jam after baking.
Mix apple varieties (like Granny Smith + Honeycrisp) for more flavor.
Serve warm with vanilla ice cream or whipped cream for a perfect pairing.
Dough can be made 1 day ahead and chilled.
