This classic meatloaf is tender, flavorful, and topped with a sweet-savory glaze. Made with ground beef, breadcrumbs, and a rich tomato sauce, it’s a comforting dinner that never goes out of style. Pair it with mashed potatoes, roasted veggies, or a simple green salad for the perfect weeknight meal.

Ingredients
  

  • 2 lbs ground beef
  • 1 yellow onion chopped
  • 3 –4 garlic cloves minced
  • ¾ cup breadcrumbs or 1 slice sourdough bread, slightly wet
  • ¼ cup Worcestershire sauce plus 2 tbsp for the sauce
  • Salt & black pepper to taste
  • 1 can tomato paste
  • 1 cup beef broth or less, as needed
  • 1 –2 tbsp brown sugar

Equipment

  • Large mixing bowl
  • Loaf pan (9×5 inch recommended)
  • Small mixing bowl (for glaze)
  • Measuring cups & spoons
  • Sharp knife and cutting board

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, onion, garlic, breadcrumbs, ¼ cup Worcestershire sauce, salt, and pepper. Press mixture evenly into a loaf pan.
  3. In a small bowl, combine tomato paste, 2 tbsp Worcestershire sauce, and a little water to make a smooth sauce.
  4. Pour up to 1 cup of beef broth over the meatloaf. Spread the tomato paste sauce on top, then sprinkle with a pinch of salt, pepper, and brown sugar.
  5. Bake uncovered for 45 minutes, or until fully cooked through (internal temp should reach 160°F / 71°C).
  6. Let rest 5 minutes before slicing. Serve warm and enjoy!

Notes

Make it juicy: Don’t overmix the meat, which can make it tough.
Breadcrumb swap: Use crushed crackers, oats, or panko instead of bread for a different texture.
Add veggies: Finely grated carrots or zucchini add moisture and nutrition.
Double batch: Bake two loaves at once and freeze one for later meals.
Glaze variation: Swap tomato paste for ketchup if you prefer a sweeter topping.
