Method
- Prepare the dough: Mix all dough ingredients until a smooth dough forms. If it’s too sticky, add a little more flour. Wrap in plastic wrap and refrigerate while you make the filling.
- Cook the filling: Melt butter in a pan. In a bowl, mix apples with flour, brown sugar, cinnamon, and water. Add apple mixture to the pan and cook for 5–6 minutes, stirring every 2 minutes. Remove the lid and let cool.
- Assemble the galette: Preheat oven to 350°F (180°C). Roll out dough into a circle. Place apples in the center, leaving edges uncovered. Fold the edges of the dough over the apples.
- Finish: Brush edges with egg yolk and sprinkle with brown sugar.
- Bake: Bake for ~40 minutes, until crust is golden brown. Optionally brush apples with any leftover pan juices.
- Serve: Let cool slightly before slicing.
Notes
For extra shine, brush the apples with warmed apricot jam after baking.
Mix apple varieties (like Granny Smith + Honeycrisp) for more flavor.
Serve warm with vanilla ice cream or whipped cream for a perfect pairing.
Dough can be made 1 day ahead and chilled.
