- Slice the zucchinis in half lengthwise. Using a spoon, remove the flesh from each zucchini.
- Finely chop the zucchini flesh and onion. Sauté the onion and zucchini flesh in olive oil for about 5 minutes.
- Transfer the mixture to a medium bowl. Stir in the marinara, ricotta, mozzarella, Parmesan, and Italian seasoning. Season with salt and pepper.
- Divide the mixture between the zucchini halves. Top with extra mozzarella and mini pepperoni.
- Bake until golden brown and bubbly, about 20–30 minutes.
- Garnish with fresh basil and a sprinkle of Parmesan before serving.
