Sweet Potato Tacos

These sweet potato tacos are hearty, colorful, and packed with fresh flavors. Roasted sweet potatoes are loaded with seasoned ground beef, homemade salsa, creamy guacamole, Greek yogurt, and crunchy toppings. A healthier twist on taco night the whole family will love!

Ingredients
  

For the Sweet Potatoes
  • 2 large sweet potatoes
  • Olive oil for brushing
For the Beef Filling
  • 1 lb ground beef
  • 1 shallot or small onion, finely chopped
  • 2 tbsp taco seasoning
For the Salsa
  • 2 –3 tomatoes
  • 1 sweet pepper
  • 1/2 onion
  • Juice of 1/2 lemon
  • Handful of fresh cilantro
  • Salt & pepper to taste
For the Guacamole
  • 2 –3 ripe avocados
  • Handful of cilantro chopped
  • Splash of lemon juice
  • Salt & pepper to taste
For Assembly
  • Greek yogurt or sour cream
  • Shredded lettuce
  • Cherry tomatoes halved
  • Diced red onion
  • Extra cilantro leaves

Method
 

Roast the Sweet Potatoes
  1. Preheat oven to 425°F (220°C). Scrub sweet potatoes clean, coat with olive oil, and poke holes with a fork. Bake for 30–50 minutes until tender.
  2. Cook the Ground Beef
  3. In a skillet, sauté ground beef with shallots and taco seasoning until fully browned and cooked through.
Make the Salsa
  1. Boil tomatoes, sweet pepper, and onion for 10 minutes. Drain and let cool slightly. Transfer to a blender, then add lemon juice, cilantro, salt, and pepper. Blend until smooth.
Prepare the Guacamole
  1. Mash avocados in a bowl with chopped cilantro, lemon juice, salt, and pepper until creamy.
Assemble the Tacos
  1. Slice open the roasted sweet potatoes. Fill with ground beef, Greek yogurt, lettuce, guacamole, cherry tomatoes, salsa, red onion, and extra cilantro.

Notes

Pick evenly sized sweet potatoes – This helps them roast at the same rate, so everything is ready together.
Don’t skip the fork holes – Poking the potatoes allows steam to escape and prevents them from bursting in the oven.
Speed up cooking – If you’re short on time, microwave the sweet potatoes for 5–6 minutes before finishing in the oven for that roasted flavor.
Customize your fillings – Swap ground beef for ground turkey, chicken, or even black beans for a vegetarian version.
Make it ahead – Roast the sweet potatoes and prep salsa/guacamole earlier in the day. Just reheat and assemble before serving.
