Roast the Sweet Potatoes
- Preheat oven to 425°F (220°C). Scrub sweet potatoes clean, coat with olive oil, and poke holes with a fork. Bake for 30–50 minutes until tender.
- Cook the Ground Beef
- In a skillet, sauté ground beef with shallots and taco seasoning until fully browned and cooked through.
Make the Salsa
- Boil tomatoes, sweet pepper, and onion for 10 minutes. Drain and let cool slightly. Transfer to a blender, then add lemon juice, cilantro, salt, and pepper. Blend until smooth.
Prepare the Guacamole
- Mash avocados in a bowl with chopped cilantro, lemon juice, salt, and pepper until creamy.
Assemble the Tacos
- Slice open the roasted sweet potatoes. Fill with ground beef, Greek yogurt, lettuce, guacamole, cherry tomatoes, salsa, red onion, and extra cilantro.
