Ingredients
  

  • 1/2 head of green cabbage finely chopped
  • 1 cucumber diced
  • 2 green onions sliced
  • Small handful fresh parsley chopped
  • Small handful fresh dill chopped
  • Dressing:
  • 1/2 ripe avocado
  • Juice of 1 lemon
  • 1/4 cup water adjust for texture
  • 1/2 cup raw cashew nuts soaked if possible
  • 1/2 cup fresh spinach
  • 2 tbsp olive oil
  • 1/2 tsp salt or to taste

  • Blender or food processor
  • Large mixing bowl

Method
 

  1. Make the dressing:
  2. In a blender, combine avocado, lemon juice, water, cashew nuts, spinach, olive oil, and salt. Blend until smooth and creamy. Add more water if needed to thin the dressing.
  3. Prepare the salad:
  4. In a large bowl, mix chopped cabbage, cucumber, green onion, parsley, and dill.
  5. Combine:
  6. Pour the green dressing over the chopped veggies and toss well until everything is evenly coated.
  7. Chill and serve:
  8. Refrigerate for 15–20 minutes before serving for best flavor and texture.

Notes

Tips
• Soaking the cashews in warm water for 30 minutes will make the dressing extra smooth.
• Add chickpeas or grilled chicken to make it a full meal.
