Notes
Pick evenly sized sweet potatoes – This helps them roast at the same rate, so everything is ready together.
Don’t skip the fork holes – Poking the potatoes allows steam to escape and prevents them from bursting in the oven.
Speed up cooking – If you’re short on time, microwave the sweet potatoes for 5–6 minutes before finishing in the oven for that roasted flavor.
Customize your fillings – Swap ground beef for ground turkey, chicken, or even black beans for a vegetarian version.
Make it ahead – Roast the sweet potatoes and prep salsa/guacamole earlier in the day. Just reheat and assemble before serving.
Add a crunch – Sprinkle with tortilla chips or roasted pepitas (pumpkin seeds) on top for extra texture.
Balance flavors – The sweet potatoes are naturally sweet, so the tangy salsa, creamy guacamole, and savory beef create the perfect balance.
