Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 very ripe bananas mashed
  • 1/2 cup unsalted butter melted and cooled
  • 1/2 cup brown sugar adjust to taste
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Method
 

  1. Preheat oven to 400°F and line a 12-cup muffin pan.
  2. In a large bowl, mash bananas. Mix in butter, brown sugar, eggs, and vanilla.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  4. Add dry ingredients to wet mixture and stir until just combined.
  5. Fold in chocolate chips.
  6. Divide batter evenly among muffin cups.
  7. Place in oven, immediately reduce temperature to 350°F, and bake for ~20 minutes, until a toothpick inserted in the center comes out clean.
  8. Let cool slightly and enjoy warm!

Notes

Use very ripe bananas for natural sweetness.
Don’t overmix the batter — this keeps muffins soft and fluffy.
Sprinkle extra chocolate chips on top before baking for bakery-style muffins.
These freeze well — wrap individually and thaw when needed.
